The finest black truffles that are produced at Winter Creek Farm, originate from Perigord in the Dordogne region of France. Exquisite in aroma and fondly known as ‘black gold,’ the French black truffle variety is prized by chefs and epicures around the world and loved for its subtle and earthy aroma and flavour. Also known as Tuber melanosporum, the Perigord black truffle grows beneath the surface of the earth among the root systems of specific truffle trees, developing a symbiotic relationship with them.
At our truffles farm, we have used the evergreen holly oak as host trees. These meticulously maintained trees are surrounded by our statuesque 80 year old, 40-metre-high pines that act as a windbreak to protect the holly oaks from the harsh conditions that can affect our sub-alpine region. Within the last 100 years, production in Europe of the Perigord black truffle has significantly reduced due to changing climate conditions, however, demand among discerning connoisseurs remains justifiably strong around the globe.
How truffles grow depends largely on climate. As such, how are truffles grown relies on an ideal climate and growing conditions for producing the French Perigord truffle. The Dordogne region in France is a locale that shares a very similar climate and growing conditions as Trentham in the Central Highlands of Victoria. Trentham is located in a sub-alpine region 700 metres above sea level with multiple frosts, crisp clean air, sunshine and ample rainfall and provides a rich, dark soil ideal for growing black truffles.
